If you ever think of the best chutney/Khata you have ever had, I am sure you would have missed Oou Khata, unless you are an Odia. In the vast repertoire of khatas/ chutneys, the under rated Ouu Khata has the ability to take centre stage.
It’s a Khata made of elephant apple tempered with jaggery and panch phutan..
The culinary tradition of Odisha is centuries old. It is intertwined with the cultural identity of Odisha, and has evolved over a long period of time to acquire a uniqueness of its own. The Temple Mahaprasad offered to Deities, represents the heritage of the food traditions of Odisha. Rice, pulses and seasonal vegetables serve as the basic ingredient of Odia foods.
Out of them the Ouu Khata..is unique..it still preserves the unexplored culinary secrets of Odisha.
